Chewy Ginger Chip Cookies

If you like ginger, these are a yummy treat. I got a bakers dozen (13) out of my batch and my husband and son really liked them, they were all gone very quickly.

Ingredients

1/2 cup brown rice flour
1/2 cup spelt flour
1/2 tsp baking powder
1 Tbspn ground ginger
pinch sea salt
1/3 cup coconut crystals
2 Tblspn raw honey
1 Tblspn grated fresh ginger
1 egg
1/4 cup coconut oil melted
1/4 cup organic dark choc chopped

Directions

Preheat oven to 350 degrees
Mix dry ingredients
Mix wet ingredients
Combine wet and dry ingredients together
Mix in chocolate chips
Scoop out rounded teaspoonfuls and roll into balls.
Place on parchment lined baking sheet about 1 1/2 inches apart
Bake for 12-15 min until golden
Makes 12-14 cookies.
