CUCUMBER SALAD

This is a nice snack that is flavorful and great to eat in the spring or summer to go along with dinner or a lunch snack. Vinegar shrinks the tummy and cucumbers are full of vitamins. Just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

Ingredients

3 cucumbers
2 T cut finely purple or white onion
1 tomato (cut into big chunks)
1/3 to 1/2 cup apple cider vinegar
Pinch of Sea Salt and Pepper
Cilantro or dill to top

Directions

Cut cucumbers with or without skin into slices. Put into bowl with and mix w/ tomato pieces and onion. Add vinegar, salt and pepper. Stirring over and over to mix together. Put into fridge for one hour mixing up every 20 minutes and serve cold. Enjoy!
