Biscuits and Sausage Gravy

The biscuits serve eight and the gravy serves five. You can't even taste the coconut in the gravy - tastes just like milk gravy.
Ingredients
1C. Water minus 2 T.
1 C. Spelt Flour
1 C. Whole Grain Spelt Flour
1/2 t. Sea Salt
1 1/2 T. Baking Powder
3 T. Cold Organic Butter
16 oz. Pork Sausage or other
2 T. Spelt Flour
1 Can Coconut Milk
1/2 t. Fennel Seeds
1 t. Dried Rubbed Sage
1/4 t. Cayenne Pepper
1/2 t. Pepper
6 Fresh Basil Leaves Chopped
1/4 T. Sea Salt (gravy)
Directions
For the Biscuits:
Preheat oven to 425 degrees - line baking sheet with parchment paper.
Combine spelt flour, sea salt and baking powder by wisking together. Cut the butter in with a pastry cutter until butter is in little balls. Add fresh basil. Make well in the middle of mixture. Add water and fold in flour until completely mixed. Drop biscuits onto parchment. Bake for 12-15 min until lightly browned on the bottom. Set aside.
For the Gravy:
Heat up a skillet over Med-High heat and brown the sausage. Remove sausage and set aside. Leave about 1 tablespoon of the fat in the pan. Discard the rest. Turn heat down to Medium. Add the 2 tablespoons flour and wisk for about a minute. Add 1/3 of the coconut milk and wisk till smooth; add 1/3 more coconut milk, wisk til smooth; add last 1/3 coconut milk and stir until thickened. Add spices and than the sausage.
Cut 2 biscuits in half and spoon gravy over top - yummm.
