Apple Blueberry Oatmeal Muffin

Ingredients

2 cups gluten free oats, blended into flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 cup coconut sugar
1/4 cup plain greek yogurt
1 cup organic apple sauce
3 eggs, beaten lighly
4 TBSP melted butter (2 fats) or coconut oil (0 fat)
1/2 tsp vanilla
1 cup blueberries or other fruit

Directions

Preheat oven to 350. Combine dry ingredients in a large bowl and set aside. In a separate bowl, lightly beat eggs and mix with yogurt, melted butter (or coconut oil), apple sauce and vanilla. Combine with dry ingredients then add your blueberries or other fruit. Pour into muffin tins and bake for 16 minutes or until lightly browned.

Makes 12 muffins.

*Just to clarify on the oats: you just measure out two cups of oats, put them in a blender or food processor and grind them into oat flour. No other flour is used in this recipe.
