Serve this perfect frittata for one with a green salad on the side, if you like.

  • 2 egg, omega-3, cage-free, organic
  • 1/8 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • 1 tsp. coconut oil, raw, extra-virgin, organic
  • 2 tbs. onion, red, organic
  • 1/2 med. zucchini, fresh, organic
  • 1 oz. cheese, goat, raw, grass-fed or pastured, organic
  • 1 bell pepper, red, roasted, organic
  • 1 bch. parsley, fresh, organic

Preheat the broiler. Whisk eggs together with salt and black pepper. Heat oil in a small cast iron or other ovenproof skillet and cook onion and zucchini 2 to 3 minutes to soften. Add eggs and cook 1 to 2 minutes until almost set. Dot with goat cheese and roasted red pepper, then sprinkle with herbs. Place under the broiler until golden, 2 to 3 minutes.
