Easy, tasty "chicken wing" salad!

  • 4 oz. chicken breast, skinless, organic, free-range
  • 1 tbs. hot pepper sauce, organic
  • 1 tsp. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 c. spinach, fresh, organic
  • 1/2 c. tomatoes, grape, fresh, organic
  • 1 oz. cheese, blue, raw, grass-fed or pastured, organic

Preheat oven to 350°F. Put chicken in an oven safe baking dish. Bake for 30 minutes. In the meantime, whisk together the hot sauce and butter. When the chicken is done, remove from the oven and let it cool. Chop coarsely and toss in sauce. Serve it on a bed of spinach with tomatoes and top with blue cheese crumbles.
