Delicious cookie that's perfect for breakfast or a snack!
Preheat oven to 350ºF. In a large bowl, mix mashed banana and nut butter until completely combined. Add in applesauce, vanilla protein powder, and vanilla extract. Mix until all are completely combined. Add in oatmeal, nuts (optional), and carob/chocolate chips (optional). Combine well. Let dough rest for 10 minutes. Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet. Flatten cookies into circles. Bake cookies for 20-30 minutes, or until golden brown. Remove from oven, and let rest on cookie sheet for 5 minutes before moving to cooling rack. When cookies are completely cool, store in a covered container. Makes about 16 cookies. Serving is 2 cookies.
