Great side dish for brunch!
Place peeled and diced sweet potatoes in a large pot. Fill with enough cold water to cover potatoes. Bring water to a boil, reduce heat to a simmer, and cook potatoes until soft, about 15 to 20 minutes. Drain and cool potatoes. In a large bowl, combine the cooled potatoes, sliced onions, diced red pepper, black-eyed peas, chopped garlic, diced jalapenos, cilantro, and thyme. Season with salt and pepper to taste. Serve cold.
