Salad with a citrus twist.

  • 2 c. arugula, fresh, organic
  • 2 c. spinach, baby, fresh, organic
  • 1/2 onion, red, organic
  • 1 med. orange, fresh, organic
  • 2 tbs. dijon mustard, organic
  • 1/4 c. orange juice, fresh squeezed, organic
  • 1 tbs. vinegar, white wine, organic
  • 1/2 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

In a large salad bowl, combine the arugula, spinach, thinly sliced red onion, and orange segments.

In a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.
