Pumpkin and Pear Pancakes packed with Protein and Omega 3. Makes 4-6 pancakes.

  • 1 lrg. egg, omega-3, cage-free, organic
  • 1/2 c. flax seeds, organic
  • 1/2 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 1/4 c. pumpkin puree, 100% pure, canned, organic
  • 1 1/2 baking powder, organic, gluten & aluminum-free
  • 3 scp. stevia, loose
  • 2 scp. protein powder, BioTrust Low Carb, chocolate
  • 1/8 tsp. nutmeg, organic
  • 1/8 tsp. cinnamon, ground, organic
  • 1/8 tsp. clove, ground, organic
  • 1/2 pear, fresh, organic
  • 2 tsp. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 2 tsp. coconut oil, raw, extra-virgin, organic
  • 1 tbs. honey, raw, unfiltered, organic

  1. Combine ingredients except butter, coconut oil and honey in mixer. Mix well. For thinner pancakes (crepe thin) add 1/4 cup additional milk.

  2. Melt 1 tsp butter and coconut oil in pan or on griddle. Spoon batter by 1/4 cup portions into pan making several pancakes at a time (dependent on pan size). Cook, turning once until cooked through, 8 to 10 minutes. Serve with honey.

Variation: substitute 6 tblsp chopped Almonds and 1/2 tsp Vanilla extract for protein powder.
