A tasty one-pan creamy chicken dish, full of flavour and easy to make for an evening meal, but without the fat. Serves 3, so great for 2 people and leftovers for the next day. For someone with a more Carb rich diet, it goes really well with brown rice or quinoa on the side. I adapted this from a BBC GoodFood recipe.
In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until some fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving fat in the pan. Add the chicken and brown for 4 mins on each side. Push the chicken to one side of the pan. Tip in garlic and spring onions, and cook for 30 secs, just until the spring onions are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins. Increase the heat, tip in the peas and lettuce and cook, covered, for 4 mins until the peas are tender and the lettuce has just wilted. Check the chicken is cooked through. Stir in the Greek yogurt just before serving.
