Easy at home mayo with a strong olive oil taste!
Combine the egg, egg yolks, mustard, lemon juice, salt, and white pepper in your blender or food processor. Then with the blender or food processor running on a low speed, start adding your oils very slowly. Start out with drops and then work up to about a 1/16-inch stream. It takes a good 5 minutes to accomplish this, but the end result is worth it! Continue blending until all the oil is incorporated.
Makes about 1 1/2 cups. Cool in your refrigerator for at least 1 hour to thicken. Store in an airtight container for up to 2 weeks.
