The Fragrance of this shrimp cooking in coconut oil, ginger, garlic and coriander is absolutely Heavenly. Thus the name Fragrant Shrimp. This is a quick sautee, so have all the ingredients ready to go.
Peel and Devein Shrimp, leaving tails on. In a saute pan over medium heat, add Coconut oil then add garlic, ginger and onion. Saute briefly about 30 seconds then add coriander and shrimp, salt and pepper. Saute about 2 or 3 minutes, then add lemon juice and a splash of Pinot Grigio. Cook another minute until shrimp are done. I served this alongside Green beans sauteed in coconut oil and raw almonds.
