This vegetable soup is very tasty. It freezes well.

  • 1 onion, any type, organic
  • 1 carrot, fresh, organic
  • 1 c. celery, fresh, organic
  • 1 bell pepper, yellow, fresh, organic
  • 3 clove garlic, fresh, organic
  • 1 c. green beans, fresh, organic
  • 1 tsp. thyme, fresh, organic
  • 1 bay leaf, organic
  • 1 tsp. black pepper, ground, organic
  • sea salt, unrefined and pure to taste
  • 2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 32 fl oz. chicken stock, organic, free-range
  • 4 c. tomatoes, plum, fresh, organic
  • 2 can cannellini beans, organic
  • 4 c. kale, any variety, fresh, organic

Saute the onions, carrots and celery in olive oil for about 5 minutes at medium heat. Add the red pepper, garlic, green beans, kale or cabbage and herbs and saute about another 5 minutes, until vegetables are softened. Add herbs and black pepper. Raise heat and add chicken stock, plum tomatoes, cannelini beans with residual starchy liquid. Simmer for another 30 minutes. Makes 4 quarts of soup.
