I just come up with this version of an organic strogonoff made with all organic ingredients and replacing meat for organic chicken breast. I used Rigatoni pasta. I come out better than the regular strogonoff... See for yourself.

  • 4 mushrooms, Portobello, organic
  • 1 lbs. broccoli, fresh, organic
  • 1 c. green peas, fresh, organic
  • 8 oz. cream cheese, cultured, raw, grass-fed or pastured, organic
  • sea salt, unrefined and pure to taste
  • 1 lbs. chicken breast, skinless, organic, free-range
  • 1 c. pasta, brown rice, organic
  • 3 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 2 tsp. garlic powder, organic

In a large pot boil water to cook the pasta you choose. It takes about 8 min. remove pasta and put aside in a large container; save the water, and add the organic broccoli and the green peas about 3 min.( save some water for the sauce). Cut the organic Portabella mushrroms in slices and sauteed them in a large sauce pan with 2 minced teaspoons of garlic for taste. Make sure the mushroom get gold but no burned about 5 min. cooking covered with a little olive oil. Remove from the pan and set aside. Add to the same sauce pan the strips of organic chicken breasts and cook them about 3 minutes each side not more than that to keep the tenderness and flavor of the chicken. ( Make sure you cook the chicken in high flame with a little olive oil). (1 spoon). Remove the chicken from the sauce pan and set aside as well. In the same sauce pan add the container of organic cream cheese and have it melt for about 3 to 5 minutes, Add some water from the pasta to keep the sauce light not too heavy so all the ingredients get the moisture from the cheese and the flavors melt together. Then, add the mushrooms and the chicken to the cheese sauce pan incorporating (mixing) all the ingredients, then add the pasta and the broccoli and finally the green peas and mix all the ingredients well. Perhaps all the pasta is too much... if you think so use less and save the rest for another meal. This strogonoff tastes better than meat because the Portabella mushrooms make it so deliciously tasty. Put your organic Strogonoff in a large container and serve hot right away. I have made this a lot of times but this is my first time replacing the meat for chicken. Is it good! My daughter loves it too! Enjoy!
