Whole Foods had a great sale on Mahi. I had never cooked it before. I asked the employee at the seafood counter what might make a good marinade. He said anything citrus, so this is what I came up with and it is delicious!

  • 1 lbs. whitefish, fresh, wild-caught
  • 1/4 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 4 tbs. lime juice, pure, organic
  • 1 tbs. honey, raw, unfiltered, organic
  • sea salt, unrefined and pure to taste

  1. Squeeze the juice of 2 limes in to a bowl. Add olive oil, honey, salt, pepper and whisk.
  2. Rinse Mahi and pat dry. Lightly season with salt and pepper.
  3. Pour marinade over Mahi and allow to marinade in fridge for at least 1 hr. The longer it marinades the better.
  4. Heat grill to medium. Line grates with a piece of foil to prevent fish from sticking to the grill.
  5. Pour a little marinade on foil and place Mahi, flesh side down on the foil. Turn after about 3-5 minutes and place skin side down. Pour left over marinade on Mahi and allow to cook for another 10-15 minutes. Once it flakes easily it is done.
