Heat oven to 350°F. Grease or line baking sheets with parchment paper.
In a large bowl, combine dry ingredients (almond flour, pumpkin pie spice, baking powder, baking soda, and salt) and stir with a wooden spoon. In another bowl, combine honey, coconut oil, pumpkin, and egg. Mix well. Add dry ingredients into wet ingredients, and mix until fully incorporated. Fold in the chocolate chips until evenly distributed throughout the dough.
Drop spoonfuls of dough onto prepared baking sheets, leaving about 1 inch between them. Bake for about 13 minutes or until somewhat firm to the touch and light brown. Cool on pan for 5 minutes before eating/storing. Enjoy!
