Ham, maple syrup & pecans .....Mmmmm good! Try these stuffed sweet potatoes, you'll love 'em! Hubby & Kid tested many times and loved! :)
Preheat oven to 375ºF.
Place sweet potatoes in an 8x8-inch baking dish. Bake for 45 to 50 minutes or until potatoes are tender.
Once done, cut the potatoes in half lengthwise and carefully scoop out pulp, leaving 1/4-inch shells.
Place pulp in a medium bowl and mash well with a potato masher or a fork. Stir in maple syrup. Add finely diced ham and chopped pecans. Mix well to combine.
Evenly spoon mixture into potato shells.
Return stuffed potato halves to baking dish and continue baking for 15 minutes or until potatoes are heated through.
Very carefully cut each potato in half and serve while hot and yummy!
You could spice this up any way you'd like. Of course, I used to use a few tiny marshmallows, but now I don't! I think a little mozzarella cheese might be good on top. Will have to try that sometime
