Cool and crunchy salad with a sweet -tart vinegar dressing. Fast and easy to prepare. Hubby & Kid tested! :)

  • 2 c. cucumber, fresh, organic

Whichever sweetener you use, make sure it equals the taste of 2 Tablespoons sugar. Maybe add a bit at a time till the flavor is right for you

In a large bowl, combine cucumber and onion.

In a small bowl, combine vinegar, water, Stevia (or sweetener of choice), parsley flakes, and black pepper.

Pour dressing mixture over cucumber mixture. Mix gently. Cover and refrigerate for at least 1 hour. Just before serving, drain vegetables.

Serves 4 (1/2 cup each)
