A South Carolina favorite that will be the hit of any party!

  • 2 lbs. shrimp, fresh, wild-caught
  • 1/2 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 c. vinegar, apple cider, organic, unfiltered, raw
  • 1 c. onion, sweet, organic
  • 1/4 c. lemon juice, pure, organic
  • 1 tsp. red pepper flakes, crushed, organic
  • 1 tsp. peppercorns, black, organic
  • 1 tsp. sea salt, unrefined and pure
  • 1 tsp. garlic, fresh, organic
  • 1 tsp. celery seed, organic
  • 4 bay leaf, organic

Combine all ingredients except shrimp in a glass, heat-proof container. Mix well. Peel shrimp and add to pot of boiling water. Boil for 2 minutes (the pickling will "cook" them the rest of the way) Add shrimp to the bowl and toss. Let them sit until at room temperature and then refrigerate overnight. Serve chilled.
