Zesty is the perfect way to describe this. Wonderful served with grilled fish/meat of any kind.

  • 7 oz. quinoa, white, organic
  • 14 c. water, purified
  • black pepper, ground, organic to taste
  • 1 lrg. tomatoes, red, fresh, organic
  • 1 sml. zucchini, fresh, organic
  • 1/4 c. onion, red, organic
  • 1 3/4 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • 2 1/2 tbs. lemon juice, pure, organic
  • 1/4 c. basil, fresh, organic
  • 1/3 c. cheese, feta, raw, grass-fed or pastured, organic

Rinse quinoa in a fine mesh strainer for several minutes under cold water to remove bitter outer coating. Combine quinoa, water, and black pepper in a small saucepan over high heat. Bring to a boil, reduce heat, and simmer until all liquid has been absorbed, about 10 minutes.

Meanwhile, combine diced tomato, diced zucchini, diced red onion, olive oil, lemon juice, and chopped basil in a mixing bowl. When quinoa is done, add it to the mixing bowl. Let mixture chill for awhile before adding crumbled feta. Overall, this is best served after chilling 4 hours or longer.
