A one dish meal that's quick and easy to make

  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 bell pepper, red, fresh, organic
  • 6 lrg. flounder, fresh, wild-caught
  • 1 tomato sauce, organic
  • 1 med. cauliflower, fresh, organic
  • 1 c. peas, baby, frozen, organic
  • 3 tbs. cheese, hard Italian, any type, raw, grass-fed or pastured, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 red pepper flakes, crushed, organic
  • 1/3 c. parsley, fresh, organic

Preheat the oven to 375 degrees. Use a 9" x" 13" rectangular or a 16" round oven proof dish. Break the cauliflower up into small flowerettes. Cook the cauliflower in a covered pot with 2" of water until it is al dente, about 6 minutes. Drain the cauliflower and lay down in the bottom of the baking pan. Sprinkle the peas over the cauliflower. Pour the tomato sauce into the oven proof dish, over the cauliflower and peas. Season to taste with the salt, pepper and red pepper flakes. Lay each fillet of flounder on top of the sauce, etc in a single layer. Sprinkle with the grated cheese and bake in the hot oven for about 30 minutes or until the sauce is bubbly and the fish is cooked thru. Before serving sprinkle with the chopped basil and parsley.
