Family favorite!

  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 med. onion, any type, organic
  • 2 stlk. celery stalk, fresh, organic
  • 3 med. chili pepper, poblano, fresh, organic
  • 1 clove garlic, fresh, organic
  • 1 tsp. cumin powder, organic
  • 1/2 tsp. coriander, ground, organic
  • 1/4 tsp. cayenne pepper, powder, organic
  • 1 lbs. turkey, ground, grass-fed or pastured, organic
  • 2 can cannellini beans, organic
  • 4 c. chicken broth, organic, free-range
  • 3/4 tsp. oregano, dried, organic
  • sea salt, unrefined and pure to taste
  • 1/3 c. cheese, cotija, grass-fed or pastured, organic
  • 1 bch. cilantro, bunch, fresh, organic

Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.

Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink about 2 minutes. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.

Add salt and more cayenne pepper, to taste, and continue cooking, partially covered, 10 minutes longer. Ladle into individual bowls and top each serving with cotija and cilantro.
