Fresh salmon is better, but these patties are good!

  • 15 oz. salmon, canned, wild-caught
  • 2 tsp. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 med. onion, any type, organic
  • 2/3 c. breadcrumbs, made from gluten-free bread, organic
  • 2 egg, omega-3, cage-free, organic
  • 1/4 c. parsley, fresh, organic
  • 1 tsp. mustard seed, ground, organic
  • 3 tsp. coconut oil, raw, extra-virgin, organic

Drain the salmon, and reserve the liquid. Flake the meat in a bowl. Cook the chopped onion in the butter in skillet, then add it to the bowl. Add the reserved liquid from the salmon, half of the bread crumbs, parsley, and mustard. Mix well. Shape patties, and coat patties in the rest of the bread crumbs. Cook patties until golden brown in the oil.
