This is amazing. It is a twist off my banana bread but with applesauce.

  • 1 c. applesauce, no sugar added, organic
  • 1/2 c. honey, raw, unfiltered, organic
  • 1/2 c. coconut oil, raw, extra-virgin, organic
  • 1 tsp. vanilla extract, organic
  • 2 egg, omega-3, cage-free, organic
  • 1 3/4 c. flour, oat, organic
  • 1/4 c. flax seeds, ground or meal, organic
  • 1 tsp. baking soda, pure
  • 1/2 tsp. cinnamon, ground, organic
  • 1/2 tsp. nutmeg, organic
  • 1/4 tsp. ground allspice, organic
  • 1/2 c. raisins, organic
  • 1/2 c. pecans, raw, organic
  • 1/2 c. walnuts, raw, organic

Preheat oven to 350ºF. Grease the bottom of a 9-inch square pan with coconut oil.

In a large bowl, combine applesauce, honey, coconut oil, vanilla extract, and eggs. Beat for about 1 minute at medium speed. Add oat flour, ground flax seed, baking soda, and spices. Stir just until dry ingredients are moistened. Stir in raisins and chopped nuts. Pour batter in prepared pan.

Bake for 25 minutes or until toothpick inserted in center comes out clean. Cool in pan for about 5 minutes. Remove from pan and cool completely.
