I prepared this dish on the spur of the moment, with all fresh ingredients and my family was raving at the flavor. Coconut oil is my new favorite ingredient!!
Melt the coconut oil in large frypan or wok. Peel and mince the ginger and garlic, and add it to the pan. Saute for a few minutes to release fragrance (tantalizing) Then add sliced chicken breasts in batches if you wish and stir fry until partially cooked. Chop Choy Sum, slice mushrooms and carrots, and cut pineapple into cubes. Add veggies and pineapple to the pan, and stir fry until cooked to your preference. (Personally, I like my carrots and broccolini still a bit crisp.) Add nuts if you wish. Then add the soy sauce and cook for a couple more minutes.
Great served with brown rice and fresh lemon wedges. A fragrant, tasty, nicely balanced protein and carb dish - left my family quite satisfied!! Hope you enjoy!
