Very yummy, quick and easy recipe!

  • 4 c. broth, vegetable, organic
  • 2 c. quinoa, white, organic
  • 1/2 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 tsp. sea salt, unrefined and pure
  • 2 tbs. Italian herbs or seasoning, organic
  • 1 med. onion, red, organic
  • 1 med. bell pepper, red, fresh, organic
  • 1 med. bell pepper, yellow, fresh, organic
  • 1 bell pepper, orange, fresh, organic
  • 2 c. mushrooms, cremini, organic
  • 1 bch. asparagus, fresh, organic
  • 2 c. broccoli, fresh, organic
  • 1 sml. cauliflower, fresh, organic
  • 2 sml. zucchini, fresh, organic
  • 1/3 c. lemon juice, pure, organic
  • 1/3 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 1/2 tsp. sea salt, unrefined and pure
  • 1 tsp. black pepper, ground, organic

Rinse quinoa in cold water and place into sauce pan. Add vegetable stock and bring to a boil. Boil rapidly for 5 minutes, cover, and turn heat off. Keep covered for 20 minutes. Chop all vegetables into bite sized pieces and combine in a large bowl. Add olive oil, sea salt, black pepper, and Italian seasoning. Mix well. Grill vegetables on BBQ until tender. Mix vegetables and quinoa together. Add dressing and toss. Cool before serving.
