Meatballs are one of my favorite foods in the world. Here's a recipe for Norwegian Meatballs (Karbonader) that I adapted to fit into the program so I could satisfy my craving. The nutmeg gives these a unique flavor that is absolutely to die for.

  • 1 lbs. beef, ground, free-range or grass-fed, organic
  • 1 c. coconut milk, unsweetened, full-fat, organic, canned
  • 1 egg, omega-3, cage-free, organic
  • 1/4 c. breadcrumbs, made from sprouted whole-grain bread, organic
  • 1 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • 1 tsp. nutmeg, organic
  • 2 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 sml. onion, any type, organic

  1. Bake 2 pieces of SWG bread in the oven for 1 hour at 225 degrees.
  2. Crumble hardened SWG bread into a food processor and mix until you have fine bread crumbs.
  3. In a large bowl mix ground beef, onion, egg yolk, bread crumbs, salt, pepper, coconut milk and nutmeg. Mixing this by hand produces the best results, as you can really dig in and make sure everything is properly blended together.
  4. Form 20 meatballs by hand.
  5. Melt 2 tbsp of raw butter over medium-low heat.
  6. Lay meatballs in the pan and cover with a lid.
  7. Cook for ten minutes and turn to brown the other side.
  8. Cook an additional ten minutes.
  9. Remove from heat and serve.
