I found a recipe for kale chips on a children's site of quick and easy snack ideas, and I tweaked it to make it healthier.

  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 bch. kale, any variety, fresh, organic
  • 1/4 tsp. sea salt, unrefined and pure

Preheat oven to 350°F (175°C). Line a non-insulated cookie sheet with parchment paper. Remove kale leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale. Mix extra virgin olive oil and sea salt (up to 1 teaspoon) together in a Ziploc baggy. Place kale in baggy to coat with seasoned oil. Place kale on prepared cookie sheet and baked in preheated oven until the edges are brown but not burnt, about 10-15 minutes.

Tip: Watch carefully toward the end of cooking time as kale goes from browned edges to burnt very quickly.
