A different spin on shepherd's pie, great for protein types!

  • 17 oz. pork, ground, organic
  • 1 onion, red, organic
  • 2 c. spinach, baby, fresh, organic
  • 1 tbs. oregano, fresh, organic
  • 1 tsp. paprika, organic
  • 2 c. sweet potato, fresh, organic
  • 3 clove garlic, fresh, organic
  • 1 tbs. chives, fresh, organic
  • 1 tbs. marjoram, dried, organic
  • 1 lrg. tomatoes, red, fresh, organic
  • 1/2 tsp. bouillon, vegetable, organic

FRY PAN: On high: Fry the onion in a little olive oil until it starts to go clear. Add a cup of water, all the spices and the tomato and stir. (Start the water in the saucepan to boil the sweet potatoes now) Add the mince and break it up with a spoon, and stir until the mince has browned Turn to low-med heat to simmer. Add the baby spinach, and allow to wilt before stirring through. Make sure it doesn't dry out, and if it looks like it might and the sweet potato hasn't finished cooking yet, just add a little more water. All up this should cook for about 40 mins, and shouldn't be runny at all.

SAUCEPAN: Once the meat sauce is simmering, put the sweet potato in the boiling water. Cook until soft (usually about 20 mins from the time the water has come back to boil)

OVEN: Turn the oven to 200 degrees Celcius (400 deg F) Pour the meat sauce In a 20cm square baking dish. Blend the sweet potato with a bamix or food processor, and spread it over the meat in the dish. Run a fork over the top so it has an rippled texture on top. Baking dish goes in the oven for 20-30mins.
