An old favorite modified to be BD-friendly... yummy!

  • 1 3/4 c. flour, spelt, whole-grain, organic
  • 1/2 c. honey, raw, unfiltered, organic
  • 1 tbs. baking powder, organic, gluten & aluminum-free
  • 1 tsp. baking soda, pure
  • 1 tsp. cinnamon, ground, organic
  • 1/2 tsp. ginger, ground, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 1 lrg. orange, fresh, organic
  • 1 egg, omega-3, cage-free, organic
  • 3/4 c. pumpkin puree, 100% pure, canned, organic
  • 1/4 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 1/4 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured

Preheat oven to 375°F. Grease 12 cups of a muffin pan.

In a large bowl, combine spelt flour, baking powder, baking soda, cinnamon, ginger, and salt. Stir to combine. Make a "well" in the middle of the ingredients in the bowl.

Cut orange into 8 wedges, but do NOT peel. Process orange wedges in a blender until smooth. Add honey, egg, pumpkin, milk, and melted butter. Blend until smooth. Pour in "well" in the other bowl. Mix well to combine all of the ingredients.

Fill greased muffin cups about 3/4 full. Bake for 18-20 minutes.
