A healthier, gluten-free version of the fall favorite!
Preheat oven to 350ºF.
Prepare crust: combine walnuts, almond, and dates in a food processor or Magic Bullet. When it's a crumbly consistency, press it into a pie pan to form the crust.
Prepare filling: In a bowl, combine pumpkin puree with spices. Add coconut sugar, and mix well. Add eggs, beating to combine. Add coconut milk, and mix well. Pour mixture into prepared crust.
Bake until the filling is firm and knife inserted into center comes out clean. Let cool before serving.
