As simple as it sounds. One of my favorite breakfasts!
Once kale has been washed and stems removed, chop into bite sized pieces. Heat oil in a frying pan over medium heat. Saute kale until softened, 3-7 minutes. Cook eggs over easy, sprinkle with Cajun seasoning (or just use salt and pepper), and serve over kale. You can have with toasted sprouted grain bread or eat it just like that.
