A vegetable pilaf that is the perfect side for chicken, fish or steak. A healthy replacment for the white rice version.
Heat coconut oil in a saucepan over medium heat. Add diced celery, diced onion, and chopped garlic. Cook for 5 minutes, stirring often, or until the vegetables are softened. Do not allow them to brown up. Add chopped carrots and peas.
Stir in the rinsed quinoa, bay leaf, salt and pepper, as desired. Add the chicken broth and bring to a boil. Reduce to a simmer and cover. Cook for 10 minutes.
Cook another 5 minutes or until all of the liquid is absorbed. Fluff with a fork, mixing the vegetables into the quinoa. Adjust the seasonings and remove the bay leaf. Add tomatoes and serve.
