This is a basic muffin recipe that you can add 1 cup of your choice of berries to. It is moist and tasty and mostly free! And if you don't add the berries, these are still great with just a little butter and/or jam.

  • 8 egg, omega-3, cage-free, organic
  • 1/4 c. coconut oil, raw, extra-virgin, organic
  • 1/4 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1/2 c. coconut milk, unsweetened, full-fat, organic, canned
  • 1/3 c. honey, raw, unfiltered, organic
  • 1 tsp. lime juice, pure, organic
  • 1 tsp. vanilla extract, organic
  • 1/4 tsp. sea salt, unrefined and pure
  • 1 tsp. baking powder, organic, gluten & aluminum-free
  • 2/3 c. coconut flour, organic
  • 4 egg white, from large egg, cage-free, organic
  • 1/8 tsp. cream of tartar, organic
  • 1 pinch stevia, loose
  • 1 c. berries, any type, fresh, organic

Beat eggs, melted coconut oil, melted butter, coconut milk, honey, lime juice, vanilla, and salt together. In a separate bowl, sift together coconut flour and baking powder. Add dry mixture to wet mixture and mix well.

In another bowl, beat the egg whites, cream of tartar, and stevia on medium high speed until the egg white form stiff peaks. Gently fold the egg whites into the muffin mixture. If using, fold in the berries.

Grease a muffin pan with coconut oil and coconut flour to prevent sticking. Spoon muffin mixture evenly into 12 muffins and bake at 350°F for 30 minutes. Let cool for 5 minutes before removing from the pan. Cool on a wire rack or enjoy while still warm!

Makes 12 muffins.
