A gluten-free recipe for yummy quinoa cookies!
Preheat oven to 350°F. Line a baking sheet with parchment paper. Beat together honey, butter, nut butter, and vanilla in a medium sized bowl until creamy. Combine rice flour, quinoa flakes, baking soda, and salt in a small bowl. Add to honey mixture and beat until well blended. Stir in nuts if desired. Drop round teaspoon sized portions about 2 inches apart onto baking sheet. Bake for 12-15 minutes or until light golden brown. Cool for 1 minute before removing from cookie sheet.
