This is a pretty dish to serve and when you chop the eggs up into the veggies it makes an easy one dish meal. This can also easily by adjusted to different protein and carb needs.
Add 1 tsp of olive oil to a 12" saute pan over medium heat. Add chopped onions and saute until about half done. Add chopped mushrooms and minced garlic, season with salt and pepper to taste, and saute until veggies are done. Add kale (stems removed and leaves torn into bite-sized pieces), and stir until coated completely with oil and slightly wilted. Pour into a bowl and set aside covered to stay warm. Reduce heat to medium-low. Add coconut oil to pan. Gently break two eggs into pan and cook over easy. Remove and serve over veggies in bowl. Enjoy!
