Orange Icon  Strawberry Shortcake

Great idea if you're craving something sweet but don't want to ruin your eating habits.

Ingredients

  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 cup butter, at room temperature
  • 2 cage-free, organic eggs
  • 3/4 tsp lemon juice
  • 2 Tbsp raw honey
  • 2 cans full-fat coconut milk
  • 1 tsp vanilla extract
  • 1-2 Tbsp maple syrup
  • 2 cups fresh strawberries

Directions

Preheat oven to 350ºF. Combine almond flour, tapioca flour, sea salt, and baking soda in a bowl. Add the butter to the bowl and massage it into the flour mixture. In a separate bowl, combine eggs, lemon juice, and honey. Use a whisk to mix well. Add wet mixture to dry mixture a little at a time, mixing gently with a spatula or your hands after each addition. Line a baking sheet with parchment paper. Spoon batter onto the baking sheet – should make about 20 medium-sized biscuits. Bake for about 18 minutes.
Cream - Refrigerate cans of coconut milk overnight. Open can and use a spoon to carefully scoop out all of the fat at the top. Put the fat in a bowl. (Save the liquid to use in smoothies!) Add vanilla and maple syrup to the bowl and beat with a hand mixer until cream reaches desired consistency. Store in refrigerator until ready to use. Top a biscuit (or two) with cream and sliced strawberries. Enjoy!

  Buffalo Burger

4 Proteins 1 Fats 2 Carbs

Prep Time: 5 minutes

Cook Time: 6 minutes

This is just a really good way to have a burger.

Ingredients

  • 3-4 oz ground buffalo
  • Sea salt to taste
  • 1 Tbsp coconut oil
  • 1 slice SWG bread
  • 1 slice manchego cheese
  • 1 small handful baby arugula
  • 1 slice white onion
  • 1 slice tomato

Directions

Form a patty with the ground buffalo and salt both sides generously while melting coconut oil in a skillet over medium heat. Place buffalo patty in skillet and flip after 3-5 minutes. Add manchego cheese while you toast your bread. Layer your sandwich after meat is fully cooked through – bread, arugula, tomato, burger, cheese, onion.

  Pumpkin Pancakes

Makes 6 large pancakes - serving size is 2 pancakes.

Ingredients

  • 1 (15 oz) can organic pumpkin (or fresh and pureed)
  • 6-8 eggs
  • 3 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1 pinch or to taste cinnamon
  • 1 pinch or to taste orange zest
  • 1 pinch or to taste freshly grated ginger
  • 1 pinch or to taste cardamon
  • 1/4 tsp vanilla

Directions

Mix all ingredients to form the pancake batter. Cook over medium heat using coconut oil or butter.

  Garlic & Red Pepper Flake Shrimp

This goes fast...... Have all your ingredients measured out and ready to go! Ready, Set, AMAZING!

Ingredients

  • ½ Tbsp coconut oil
  • 1 lb. shrimp (16-20 count) – peeled, deveined and patted dry
  • Pinch of sea salt to taste
  • 6 cloves garlic, minced finely
  • 3 Tbsp lemon juice
  • 1/3 cup chopped parsley, divided
  • 2 Tbsp cold butter, cut in 4 pieces
  • Water as needed
  • ¼ tsp red pepper flakes
  • 6 large Romaine lettuce leaves torn (optional)
  • Sprinkle of parmesan cheese (optional)

Directions

Have your ingredients measured and ready, there’s no time to do this between steps. Heat coconut oil in a skillet on high. Once the oil starts smoking, add the shrimp and salt while stirring continuously. When the shrimp have started changing color, add the garlic and continue to stir. Add lemon juice, half of the parsley and butter and turn heat down to simmer. As the sauce thickens, pull the shrimp out and serve over a bed of Romaine lettuce, or by itself. Add water as needed to thin the sauce and pour over the shrimp. Top it with the remaining parsley, red pepper flakes and parmesan cheese.

This program keeps amazing me!.... Or maybe it's more like I'm amazed at how my body responds to this way of eating!! Went through my closet looking for an outfit for my niece's 16th birthday beach party. Took out the "safe" clothes.... black capris and loose top that hides the rolls. As I was looking, I saw what I really wanted to wear. Beige capris and a sheer top with a camisole. What the hey!... Tried them on anyways! ....I bet you can guess which outfit I'm wearing!!!! (BIG SMILE!!) ....Even though sometimes you may find this is really tough, you get frustrated, and angry.... Keep at it!! Treat yourself with respect. You deserve it just as much as anyone else. If you trip up... give yourself a break. You just learned something about yourself. And this knowledge will lead you. Success to everyone today!

Another thing I like about The share part of this program other then the encouragement and education we get from each other but I also feel I've made new friends even tho I've never met anyone face to face.
